Spicy Red Beans & Tuna Wrap

  • 2 cans of tuna in water
  • 1 can of red beans
  • 2 handfuls of shredded carrots
  • 1 handful of chopped scallions
  • 1 tablespoon of hot salsa
  • 1 tablespoon of plain greek yogurt
  • 1 tablespoon of dijon mustard

  • Mix all of the ingredients in a big bowl and then wrap the mixture in spinach tortillas.  
You don't have to eat all of it - save the leftovers for tomorrow's lunch ;) Enjoy!
