I first fell in love with this Cowboy Caviar recipe because of all the yummy veggies and how simple it looked to make.
It's an All American dish that's not only easy, but delicious too!
WHAT YOU'LL NEED:
1 red pepper
1/4 cup fresh cilantro
2 cups fresh corn
1 large zucchini
1/2 red onion
salt & pepper
WHAT TO DO:
Rough chop: red onion, red pepper, zucchini.
Set aside in a bowl.
Cube the avocado. Rough chop the cilantro, discarding any stems.
Set all aside.
In a large saute pan, add in olive oil.
Saute red pepper, corn, zucchini, and red onion. This usually takes between 5-8 min.
Add in avocado.
If you don't like cilantro, add in chives, parsley or leave it out completely.
Give it a gentle stir, being careful not to smoosh the avocado.
