Cowboy Caviar

Tonight we are having the Cheeseburger Pasta Bake for leftovers http://iamjessicapotter.blogspot.com/2012/07/easy-italian-pasta-bake.html.

But with it we needed something else along with it.
I first fell in love with this Cowboy Caviar recipe because of all the yummy veggies and how simple it looked to make.

It's an All American dish that's not only easy, but delicious too!

1 red pepper
1 avocado
1 lemon
1/4 cup fresh cilantro
2 cups fresh corn
1 large zucchini
1/2 red onion
olive oil
salt & pepper

Rough chop:  red onion, red pepper, zucchini.
Set aside in a bowl.
Cube the avocado.  Rough chop the cilantro, discarding any stems.
Set all aside.

 In a large saute pan, add in olive oil.
Saute red pepper, corn, zucchini, and red onion.  This usually takes between 5-8 min.
 Pour veggies into bowl.
Add in avocado.

Add cilantro.
 If you don't like cilantro, add in chives, parsley or leave it out completely.

 Give it a gentle stir, being careful not to smoosh the avocado.
 Squeeze in half of lemon and add salt and pepper to taste.
 All done!
 Serve hot, cold, or at room temperature.
